Maceration — the Prelude
Before the first drop is distilled, the botanicals begin their quiet preparation.
For 48 hours, spices, herbs, berries, roots and citrus peels rest in 100% grain spirit, allowing their essential oils and aromatic compounds to slowly unfold.
Each botanical group is macerated at carefully adjusted strengths of alcohol and water — a precise approach that allows every ingredient to reveal its finest character.
This is where the first notes of the composition begin.
Cold distillation
Brass Monkey Gin distilled not with fire, but with cold and vacuum.
Traditional distillation relies on heat, often sacrificing the most delicate aromas. Our method is different.
Under deep vacuum, the liquid begins to boil at temperatures no higher than 35°C. In this gentle state, the most fragile aromatic molecules remain intact — preserving the natural brightness, elegance, and purity of every botanical.
Inside the still, the pressure mirrors conditions at 14,600 metres above sea level — a realm closer to the edge of the atmosphere than the ground below.
From this rarefied environment we select only the most expressive part of the distillate. Just 40% becomes the heart of Brass Monkey Gin.
Rest — the Final Harmony
The selected heart of the distillate is blended with carefully prepared artesian water and brought to 45% ABV.
Before bottling, the spirit is given time to rest for at least 21 days in stainless steel vessels. During this quiet interval the flavours settle, soften, and align — each note finding its place in the composition.
